The cold winter is idyllic for salting, the first phase of ham production. While the hot, dry summers we experience in the peaks of Granada favor curing in the cellar. During these hot months the hams sweat, infiltrating their own fat into the muscle and acquiring unique sensory nuances. Nature sets the times and guidelines, and the result could not be other than delicious hams and sausages, in harmony with the resources provided by our privileged environment.
